Carrots part 1

      10 lbs. of Carrots 3 ways!

I absolutely love carrots but I prefer them cooked to raw.  This year I’m trying to do more cooking (hubby is thrilled, G - not so much) and trying to add a little more variety to my repertoire recipes. To start with, I thought I’d pay a little homage to one of my (and Bugs Bunny’s) favorite veggies, the carrot! So I’m going to show you how to work with them 3 different ways.

I’ve been watching a lot of cooking programs lately to get ideas and one afternoon, I noticed all of my faves seemed to be roasting different veggies to go along with all of their different  entree’s.  Well, maybe I’m a little late to the party but some of these, I never thought to roast, who knew?

So, let’s start with something simple. If you’re looking for a quick dinner, this isn’t it. But, sometimes I like something that’s easier, than it is fast. Being able to toss ingredients together and throw them in the oven, or on the stove for an hour can give me the perfect opportunity to prep food for quick meals later in the week, help G study, or just spend time chatting with him before hubby gets home.

For my family of 3 I actually only used 5lbs. of carrots but for larger families I would definitely go with 10lbs.  Start by cleaning 1/3 of your carrots (or, enough for tonight’s dinner).  Then, while those are on the oven your can work on cleaning and prepping the remaining 2/3rds for later on.
